Subject: [PATCH] Implement depth level normalization in StandxGateway for
 improved order book handling. Refactor depth data processing to utilize the
 new normalizeDepthLevels function, ensuring consistent bid and ask sorting.
 Update symbol handling to accommodate fallback logic.
